yellow flower that faces the sun, filled
tightly with hundreds of seeds. Sunflower has been used
symbolically to denote sun and energy throughout history.
Sunflower seed oil is today widely used as cooking oil and
is rich in vitamin E content. It is rich in
polyunsaturates and linoleic acid and has a fairly low
rancidity level compared to other oils. sunflower seeds have
a good fibre content and are rich particularly in

| Canola
The quality and height attained by canola plants
squarely depend on growing conditions. Each plant produces
groups of yellow flowers which mature into small green pods
that become brown on ripening. On harvest, each pod yields
about 20 seeds that are crushed to extract the oil and to
make meal or stored for future use. In addition to its
edible uses, canola oil is used in a number of inedible
applications such as cosmetics and printing inks. Canola
meal is used as a feed for livestock, poultry and as a
fertilizer. |
