| Beet Root
The top leaves of the plant are cooked as
greens and the roots are cooked or even pickled.
The rich crimson colour is a feast to any salad
preparation where it lends colour as well as
taste.
Beet leaves are an excellent source of vitamin
A and the roots are a good source of vitamin C.
They are particularly rich in folates and are
also high in fibre, both soluble and insoluble.

| Carrot
Carrot is a cool-season root crop which is grown
for the thickened root it produces. Carrots can be
eaten both raw as well as cooked. The tender
'baby' carrots are sought for their colour, and
juicy content. They are rich in carotene (the
source of vitamin A) and high in fibre and sugar
content.

Onion
Onion is a cool-season vegetable that can be
grown successfully throughout most parts of the
country. The bulbing process of onions depends on
day lengths. High temperatures and low humidity
are advantageous during bulbing and curing. Onion
is a common ingredient in almost all of the
Indian curries. |
