Amaranths
These are tender annuals which grow straight with the height
touching almost 8 ft. The leaves are long or oval, 2 to 4 inches long and they start out
as green or dark red and have pink centres or uniform green colour. The
plant is usually cut back to encourage branching and delay flowering. This is one of the best heat-resistant
and commonly used greens for cooking.

Coriander
Coriander is an annual plant with multi-lobed leaves. The volatile oil that imparts the fragrant smell to the plant is present in the leaves and also in the seeds.
The leaves are used for seasoning and garnishing in Indian and Eastern cuisines. Seeds are used as a condiment, an ingredient of curry powder.
